Creamy lemon pepper pasta

This pasta dish was something I made on a limb. I was in the mood for something with a light flavor, not so heavy but also didn’t lack any depth. This is a perfect week night pasta when you’re feeling a little comfort, but don’t want all the pasta guilt.

Pasta - I used Ronzoni Rotelle

* Cook your pasta according to the box in salted water

Lemon pepper sauce:

-Butter: 4 tbsp

-Lemon slices: 1 small lemon sliced in 1/2 inches

-Yellow onion sliced thin: 1/2 medium onion, if you have a mandolin I suggest using that for super thin slices

-White wine: 1/3 cup

-Minced garlic: 1/2 to 1 tbsp depending on preference

-Black pepper: 1/2 tbsp

-Heavy cream: 1 1/2 cups

-Garlic powder: 1 tsp

-Onion powder: 1 tsp

-Dried parsley: 1 tsp

-Salt: 1/2 tsp

Instructions:

• Add 3 tbsps of butter to your saucepan on medium heat

• Add lemon slices and caramelize on both sides about 2 minutes per side

• Remove lemons and preserve & add your sliced onions , 1 tbsp of butter & sauté

• Add your white wine & turn to a simmer and cook until it reduces by about half

• Add in your minced garlic and sauté about 2 minutes

• Add in your heavy cream , add back in those lemon slices & spices & turn to low

• Let cook on low covered until ready to use

Tip~ If your sauce gets too thick you can always thin it out with a little chicken stock or preserved pasta water

Chicken, Corn & Zucchini:

-Chicken: I used about 6 tenders chopped into bite sized pieces

-Corn (I used corn on the cob and charred on gas stove top): 2 ears - but you can use about 1 cup of frozen or canned

-Zucchini: 1 medium

-Summer squash: 1 medium

-Butter: 2 tbsp

-Olive oil: 2 tbsp

-Salt: 1/2 tbsp

-Pepper: 1/2 tbsp

-Grated Parmesan

Instructions:

-Chop your chicken into bite size pieces

-Mince your zucchini & summer squash

-Add olive oil to your sauté pan, turn to medium heat & add your chicken and cook until browned on the outside

-Add zucchini, squash & corn & season with salt and pepper

-Halfway thru cooking add your butter

-Once chicken is cooked and vegetables are slightly softened, turn to medium low heat

-Add in your pasta & sprinkle with Parmesan

-Pour your sauce over your pasta & mix well

-Taste & adjust spices to your liking

-Serve with some grated Parmesan, dried parsley & fresh basil
